Greek Food - Recipe: Rizopitta

Rice pie

Ingredients:
4 Tablespoon Butter (Melted)
5 Whole Egg
1.10 lb Feta Cheese (Grated)
6-8 Sheets Fyllo Pastry (Or Home-made)
2 Cup Rice
  Directions:
  • Parboil the rice and drain.
  • Beat the eggs and add to the rice along with the grated cheese, some butter, a pinch of salt and pepper to taste, and mix together.
  • Oil a baking dish and place half the pastry sheets, one at a time, brushing each layer with some butter.
  • Add the filling and cover with the remaining pastry,again brushing each layer with melted butter.
  • Sprinkle the top sheet with a little water and score through the top 3 or 4 layers with a sharp knife, dividing into individual portions.
  • Bake in a medium oven until top becomes a golden brown.
