  Salata me Lahano kai Karoto
Cabbage and Carrot Salad

15 Whole Black Olives
1 Medium Cabbage (Finely Sliced)
3-4 Medium Carrots (Grated)
1-2 Whole Lemons (Juiced)
1/3 Cup Olive Oil
2-3 Teaspoon Parsley (Finely Chopped)
1-2 Pinch Pepper (To Taste)
2-3 Pinch Salt (To Taste)
  • Combine the sliced cabbage and grated carrots.
  • Add the parsley, olives, salt and pepper.
  • Beat together the olive oil and lemon juice and pour it over the salad.
  • Garnish with sprigs of parsley.
