Greek Food - Recipe: Chicken Okra


  Chicken Okra
A variation of the previous recipe.

Ingredients:
1 Item Canned Tomatoes (Plum)
6-8 Item Chicken Drumsticks
2 Clove Garlic (Chopped)
1 lb Okra (Fresh or frozen)
2 Tablespoon Olive Oil
1 Large Onion (Chopped)
1-2 Pinch Parsley (To taste)
1-2 Pinch Pepper (To taste)
1/2 Cup Red Wine
2-3 Pinch Salt (To taste)
  Directions:
  • ** If using frozen okra (which is just fine) thaw first.
  • Put oil in hot casserole pan.
  • Salt & pepper the chicken parts and place them in pot.
  • Place cover on pot and be careful of platter.
  • Lightly brown them for 5-8 minutes.
  • Add chopped onion and garlic.
  • Stir and cook for 5 minutes.
  • Add okra, can of plum tomatoes, red wine, more salt & pepper and parsley.
  • Stir gently.
  • Cover and simmer for 1 hour.
  • Check the chicken for doneness.
  • Serve with hot white rice.
